概要
お土産です。日本各地の特別な素材を、分子料理として、棗に入れて持ち帰るをテーマにした作品。一人一人カスタムできるお土産としての柔軟性があります。
器
将来は、自分で作成した棗を使用します。
料理
今回の作品は新井園の故新井重雄さんから生前最後にお土産としていただいた抹茶を材料として使用しています。その旨みと甘みなどを味わうことに特化した一品です。新井園の抹茶に、温泉水とゲル化剤を使った雲と水: 四角いヌーベと丸いわらび餅○に抹茶パウダーをかけたものになります。
議論
日本各地にはまだ世界で広く認知されていない、真心と情熱をこめて作られた食材がたくさんあります。この一品を通して、食材と人々が出会い、自分の手を離れて新たな化学反応が生まれることがこの作品のテーマです。
Overview
This is a take-home gift.
The concept is to gather special ingredients from across Japan, reinterpret them through molecular cuisine, and place them inside a natsume (tea caddy) to be taken home.
The gift is designed with flexibility, allowing it to be customized for each individual guest.
Vessel
In the future, I plan to use natsume crafted by myself specifically for this purpose.
Dish
This work is made using matcha that I received as a final gift during his lifetime from the late Shigeo Arai of Arai-en. The focus of this work is to allow guests to fully experience the umami and natural sweetness of this matcha.
Using Arai-en matcha, onsen water, and gelling agents, the gift takes the form of “Cloud and Water”:
- a square nobe
- a round warabi-mochi form
Both are finished with a dusting of matcha powder.
Discussion
Across Japan, there are still countless ingredients created with sincerity, care, and passion that remain largely unknown to the world.
Through this piece, my hope is that ingredients and people encounter one another, and that once the gift leaves my hands, new chemical—and human—reactions are born.
That continuing transformation is the true theme of this work.
